For Gluten-Free Stories, today we’re not telling the story of a choice.We’re telling the story of a profound change. Alessandra Buti<\/strong> is coeliac in a family of bakers. A diagnosis that arrived when the future already seemed mapped out, and that asked her to rethink everything: her work, her identity, the value of everyday gestures.<\/p>\n\n

What you’re about to read isn’t a linear tale. It’s memory, passage, listening.It’s the sound of flour, the woods, the silence that lightens your thoughts, and the return to hands that knead dough \u2014 this time in a different way.<\/p>\n\n

From that house in the woods, Pietra d’Acqua B&B<\/strong> is born today. \nA place of welcome, built with care and awareness, where personal experience becomes care for whoever arrives.<\/p><\/p>\n\n

This is Alessandra’s poem. It should be read slowly.Like the things that have travelled through time and now taste of home.<\/p>\n\n

Alessandra Buti – Pietra d’acqua<\/h2>\n\n

I’m coeliac in a family of bakers.<\/p>\n\n

The diagnosis came 25 years ago,when working with my familyseemed like security for a whole lifetime.<\/p>\n\n

Meeting the right doctor,who prescribed:NO MORE WHEAT \u2014 FOR LIFE<\/strong>,<\/p>\n\n

wasn’t a healthy reliefbut a catastrophe:no more work.<\/p>\n\n

The business sold off for next to nothing(partly because of my father’s serious illness),I found myself unable to do anything,with no qualification,my self-esteem on the floor.<\/p>\n\n

The hatred I feel toward coeliac diseaseclouds my mind.<\/p>\n\n

I have a memory of my father at work:do you know the sound made by100 kg of flour and waterwhen the arms of the mixerplunge down into them?<\/p>\n\n

It’s a sort ofFLUP! FLUP!<\/strong><\/p>\n\n

But my father leaves us the house in the woods.There, thoughts grow lighter.<\/p>\n\n

When the illness carries Dad away,I go looking for his footstepsin the nature he loved.And I find my peace.<\/p>\n\n

I begin to run the house as a B&Band guests arrive:some leave stories behind,others carry promises away.<\/p>\n\n

Alone, in the house in the woods,outside the wind among the trees,I knead once morethe old recipe for cantuccini<\/em>.<\/p>\n\n

From the oven comes a scent,that very one,the same old scentof Dad’s cantuccini<\/em>.<\/p>\n\n

Then I knead bread.<\/p>\n\n

And my hands squeezeand go FLUP<\/strong>,puffing out a little cloud of flourand the smell of something good.<\/p>\n\n

This time gluten-free.<\/p>\n\n
